Waffeletten Cheesecake Bite

For the Crust

2 packages Waffeletten cookies, finely crushed into crumbs

6 tbsp butter, melted

For the Cheesecake

3 packages (8 oz each) cream cheese softened

1 ¼ cups sugar

1/3 cup unsweeted cocoa powder

1/3 cup dark cocoa powder

4 oz semisweet chocolate, melted and cooled

3 eggs

1 ½ tsp vanilla


For the Waffeletten Crust

1Preheat oven to 350°F. Stir together cookie crumbs and melted butter. Press mixture onto bottom of 6- 4” greased springform pans. Bake 8-10 minutes then let cool.

For the Cheesecake

1Beat cream cheese and sugar in large bowl until smooth. Beat in cocoa and melted chocolate. Add eggs, one at a time, beating well after each addition. Stir in vanilla. Pour the batter evenly in all 6 pans.

2Bake for 40-45 minutes or until almost set. Using a knife, loosen cheesecake from side of pan. Cool completely. Remove the sides of the springform pans and cover and refrigerate for several hours. Garnish with whipped cream and remaining Waffeleten cookies.
